Aversa sits in the middle of the flat, fertile plain just north of Naples, in the farmland of the Agro Aversano that the Romans knew as Campania Felix. Caserta, the provincial capital, lies a little further on, and the town has long served as the market where the produce of the plain is bought and sold.
For many people, Aversa tastes of buffalo mozzarella, of a glass of asprinio wine and of polacca, the soft leavened pastry that is the town's own. It sounds like students on their way to the faculties of Architecture and Engineering of the Università degli studi della Campania "L. Vanvitelli", and it looks like an old centre where the Arco Dell'Annunziata and the Palazzo Ducale stand among everyday streets and churches. The town was born Norman, the first Norman territory in the Mediterranean, handed to Rainulf Drengot as a count's seat, and the Antiche Mura della Contea di Aversa still trace the edges of that story.
However far you travel, coming back across the plain to Aversa feels like returning to where a whole kingdom began, and to a table where the mozzarella still tastes the way it should.
